La Troprovençale®

La Troprovençale®, rich in a history of family transmission, embodies the excellence of Provençal bakery and pastry. In 2007, Jacqueline, a pastry chef, and her husband Jean-Claude took over a bakery-pastry shop in the Provençal village of Paluds-de-Noves. At Maison Gaillardet, they revisited the recipe of the unique dessert that makes the house famous: a light, barely cooked brioche filled with mousseline cream. Over the years, their passion grew and was passed on to their children. Virginie, drawn to the potential of this iconic delicacy, took over and developed the business while respecting traditional craftsmanship. Buoyed by the success of this revisited «tropézienne», they decided to register their own brand, La Troprovençale®, and brought new dynamism to the company. Since then, two new mono-product boutiques have opened, one in Saint-Rémy-de-Provence and another in L'Isle-sur-la-Sorgue. The traditional La Troprovençale®, with its orange blossom brioche and vanilla mousseline cream, also comes in original flavors such as pistachio, lemon, chestnut cream, lavender… Offered in various sizes, from individual servings to large slabs for 30 people, La Troprovençale® adapts to all family and festive occasions.

In addition to this specialty, La Troprovençale® offers a wide range of delicacies: panettones, shortbread, meringues, gingerbread, orange blossom navettes, and king cakes. All these products are meticulously crafted with high-quality local ingredients, such as milk from the Tapy farm. Their latest creation combines orange blossom brioche with lavender mousseline cream, perfectly reflecting the spirit of Provence. La Troprovençale® is above all a story of family, tradition, and innovation, where the sharing of skills and love for the craft are the keys to success.
