h, Monsieur Brun! His name is so reminiscent for
many of us of Marcel Pagnol films. And anyway,
we’re in Isle sur la Sorgue, and Cédric Brun is a
pure product of the region.
Meeting this lovely man, whose food is just wonderful,
gives us all the same impression: he’s authentic, he’s kind-
hearted, and he’s talented.
We were very taken with this self-taught man. He’s
passionate about French gastronomy - completely in love
with it, and you can sense this passion through his creative
and ever-evolving cooking.
At the Carré d’Herbes, he only works with local produce,
and he loves adding a special touch with flowers, plants
and a soupçon of eastern flavours.
Brun also knows his wines. Very well. You can find wines
from all over France in his restaurant. There are some
fabulous labels and very famous appellations, alongside a
great selection of local wines from the Luberon or Ventoux.
Cédric Brun’s origin story is a great one.
He got his training from observing his chef step father at
work - thus was born his desire to become a chef, and how
he got the proverbial foot in the door.
Brun went to hotel school at the age of 16, and then his
impressive professional career began when he was 19. It
took him first of all to Fouquet’s in Paris, then to the 2 Alpes
in the mountains and then back to his native Avignon,
where he made his mark at La Mirande and then spent 10
years at the hôtel d’Europe, making his way through the
ranks as line cook, sommelier and then Head Waiter.
He bought the Carré d’Herbes in 2010, and he’s made it one
of the go-to addresses in Isle sur la Sorgue. It’s a delightful
place to meet people, where tourists and locals are welcome
to share a wonderful experience - in taste and humanity!
