his is a timeless refuge; there’s a dream-like quality
and authenticity to your experience as you wander
through its exquisite decor, so reminiscent of
eighteenth century interiors, and the slow pace of life of
houses of yesteryear.
A stay at La Mirande is an invitation to travel through the
exquisite world of French decorative arts. Authenticity is
the key word.
The rooms are decorated in keeping with the fashion
of the eighteenth century: there’s authentic dado wood
panelling, a visual support to the fabulous cotton print
wall hangings from famous Indian prints to historic toile
de Jouy fabric. These prints reach from the dado rail to the
crown moulding. The matching drapes are lined with silk;
there’s parquet flooring, furniture, paintings, engravings
and antique rugs; antique glass windows afford a vibrant,
splendid view of the nearby Palais des Papes. The
bathrooms are of the “Belle Époque” style with bathtubs
encased in Carrara “Arabescato” marble, Edwardian
fittings and block-printed wallpapering.
When it comes to gastronomy, La Mirande has several
proposals: there’s the chef’s table, the cooking school, and
the starred gastronomic restaurant. La Mirande’s cuisine
is sincere and energetic, it respects both the produce and
the people - an ode to the earth and its biodiversity.
Florent Pietravalle, 33 years old, from Montpellier, became
head chef at La Mirande in 2016, after having worked for
4 years with Pierre Gagnaire in Paris.
In 2019, his hard work was rewarded with a Michelin
Guide star. Florent’s cooking is exceptional. You witness
his generosity and committedness in the tasting menus he
proposes in series of 2, 3 or 4, showcasing the bold flavours
of Provence.
You’ll find his cooking moving. He knows our instinct is
not to force Nature to give us what it doesn’t have; his
gastronomy is ethical and eco-friendly.
And it is because of this, that in 2021, Florent Pietravalle
was awarded a new distinction by the Michelin Guide.
This distinction serves to promote establishments that
are particularly dedicated to a sustainable approach to
cooking: respect for the earth, the seasons, and livestock,
and a commitment to produce better food.
La Mirande is a veritable fairy-tale setting - it’s a place
